Recipe Book

I decided to compile some of my favorite recipes mainly because there are somethings I am really good at making and I want to share, and secondly to have them all in one place.

I Like to cook. I like to be praised for my cooking and I like taking recipes and making them my own, so feel free to adjust, tweek if you will, for your own pleasure. You will notice there won’t be a recipe for jello, rice cripy squares, or frosting because for some reason I cannot make those. Happy Eating 🙂

Banana Bread 1.0

Dry Ingredients

1 cup whole wheat flour
½ cup white flour
½ cup ground flax
1 tsp baking soda
½ tsp salt
½ tsp cinnamon

Wet Ingredients

½ cup low fat or fat free milk
2 tbsp oil (vegetable)
1 omega egg beaten
½ cup brown sugar
2 smushed bananas
1 tsp vanilla

Preheat oven at 350 F. In separate bowls mix the wet ingredients together and then the dry. If mixing by hand, combine dry ingredients until a homogenous mixture. Make a well and add the wet ingredients. Mix until just combined. Spray a loaf pan. Pour the batter in the pan. Bake for 50 to 60 minutes.

Calories per slice assuming 10 slices: 87 – 100 calories
A typical slice of banana bread is about 265 calories.

Pizza Pops

I am posting the recipe for our pizza pops (pizza pockets) that we made saturday. I got this recipe from the Rosemary Ward Relief Society Sesquicentennial cookbook. This recipe makes about 16 pizza pops.

Dough:

2 pkg yeast
2 cups warm water
4 2/3 cups flour
1/4 cup vegetable oil
2 tbsp sugar
2 tsp salt

Mix like bread dough. Turn out on 2 greased (pam spray) cookie sheets. Rest dough for 5 – 10 minutes. Press out flat and cut with pizza roller into 8 rectangles.

Filling:

2 lbs of Hamburger
1 can tomato soup
1 small onion chopped fine
celery salt
seasoning salt
1/8 cup water
1 small bottle Catalina dressing

Brown hamburger and onion. Add seasonings and water- steam 5 minutes. Add soup and dressing. Simmer 3 to 5 minutes. put about 1 tbsp of filling on each rectangle. Top with cheese fold over and pinch sides. Bake at 400 F for 15 minutes. They freeze well and can be reheated in the microwave.

Enjoy! We made our own filling with italian sausage, ham and pepperoni. We put in a large can of crushed tomatoes and a large can of tomato paste. Then seasoned according to our (Tim’s) own liking. There was too much filling so we made another batch of dough.

Jen’s Mom’s Salsa

I got this from a friend but I tweek it to make it my own. Here is the general recipe.

Ingedients

10 lbs tomatoes
8 Mild peppers
12-16 Hot peppers
3 Cups chopped onion
4 Bell Peppers
4 Teaspoons minced garlic
2 (5 ½ oz) cans tomato paste
1 ½ Cups Pickling vinegar
2 Tablespoons Pickling salt
6 Tablespoons sugar
4 Teaspoons paprika
1 Cup minced cilantro (optional)

Method

Skin, seed core and chop tomatoes. Put in a heavy bottomed pan. Seed and core peppers. Add the rest of the ingredients and bring to a boil (medium high heat). Then turn down to simmer uncovered (~ 1 hour). When reached desired consistency
put into hot sterilized jars, wipe rim, and screw on ring to finger tight,
then process for :
20 minutes for (500ml) pint size
25 minutes for (1Liter) quart size

Note : If you want hotter salsa, add more hot peppers and don’t seed and core because that is where all the heat is.

10 lbs makes about “4” Quart (1Liter) jars
