I am posting the recipe for our pizza pops (pizza pockets) that we made saturday. I got this recipe from the Rosemary Ward Relief Society Sesquicentennial cookbook. This recipe makes about 16 pizza pops.
2 pkg yeast
2 cups warm water
4 2/3 cups flour
1/4 cup vegetable oil
2 tbsp sugar
2 tsp salt
Mix like bread dough. Turn out on 2 greased (pam spray) cookie sheets. Rest dough for 5 – 10 minutes. Press out flat and cut with pizza roller into 8 rectangles.
2 lbs of Hamburger
1 can tomato soup
1 small onion chopped fine
1/8 cup water
1 small bottle Catalina dressing
Brown hamburger and onion. Add seasonings and water- steam 5 minutes. Add soup and dressing. Simmer 3 to 5 minutes. put about 1 tbsp of filling on each rectangle. Top with cheese fold over and pinch sides. Bake at 400 F for 15 minutes. They freeze well and can be reheated in the microwave.
Enjoy! We made our own filling with italian sausage, ham and pepperoni. We put in a large can of crushed tomatoes and a large can of tomato paste. Then seasoned according to our (Tim’s) own liking. There was too much filling so we made another batch of dough.
